The PALENQUEROS collection, a collaborative project launched in 2019 and returning to the US market, honors the master distillers, or palenqueros, of Oaxaca with their names and portraits featured on each bottle to highlight their craftsmanship. Curated with six artisanal producers, each bottling uses organically harvested agaves that are cooked and fermented spontaneously with the natural ambient yeast unique to each distillery. The spirits are then distilled on small pot stills and bottled at full proof to preserve their historical flavors, creating a detailed map of Oaxaca's rich terroir and the diversity of its agave species.
