In the remote commune of Baraderres, Faubert Casimir continues a family legacy of distillation that dates back to the 1940s at Distillerie Casimir. This Clairin is defined by the unique use of the Hawaii sugarcane varieties, which are harvested by hand at peak maturity. What sets Casimir apart is the traditional addition of local aromatics—typically lemongrass, ginger, and occasionally cinnamon—into the fermenting cane juice. These additions function both as a natural pesticide and as a method to lower the ph of the fermenting wash. This infusion, combined with the region’s wild ambient yeasts and a long fermentation period, creates a spirit of immense complexity and intensity, capturing the lush, tropical biodiversity of the Haitian countryside.


Distillation occurs in a traditional pot still fired by bagasse, producing a spirit that is bottled at natural strength without any dilution or filtration. The resulting liquid is a flavor monster, characterized by savory, herbaceous notes of sun-dried herbs and spice, balanced by an oily, vegetal sweetness. Because the distillery is isolated by the difficult terrain of the Baradères peninsula, the production remains a pure, unadulterated expression of pre-industrial craft, offering a profile that is both ruggedly authentic and sophisticated enough for the most discerning spirits enthusiasts.
